- 2 tsp. smoked paprika
- 2 tsp. dried oregano (or fresh if you have it!)
- 1 tsp. ground cumin
- 1/8 tsp cayenne pepper
- 2 cloves garlic
- 2 lbs. skinless, bone-in chicken thighs
- 2 Tbsp avocado oil
Combine the first 5 ingredients. Rub all over chicken thighs. Cover and chill at least 30 minutes. Preheat oven to 375 degrees F. Lay chicken thighs on an oven pan (I use a cookie sheet covered with aluminum foil for easy clean-up), drizzle with oil, sprinkle with salt, and cook for 35-40 minutes, turning halfway through.
*This is very mild and kid-friendly. If you like more spice, double the amount of cayenne pepper. Top the chicken with avocado if you like, or sauteed mushrooms work nicely too. The mashed sweet potatoes are super simple. Just peel the sweet potatoes, cut into about inch-size squares, boil in water about 20-25 minutes until tender, drain, add butter, salt, a splash of milk, maple syrup, cinnamon and just a pinch of nutmeg, and voila!
